Toni Rodriguez Academy Barcelona Spain<\/p>\n
After going vegan in 2004<\/b> for ethical reasons, Toni discovered his passion for gastronomy<\/b> and began researching and developing recipes with ingredients only of plant origin. He decided to work in vegetarian restaurants, but his concern for the research and development of vegan pastry<\/b> led him to create in 2005 his own project, the pastry maker Lujuria Vegana.<\/b><\/p>\n
Parallel to the work experiences between his bakery and vegetarian and vegan restaurants in Barcelona, Madrid and Mallorca,<\/b>he combined research and development in vegan pastry to obtain totally new products. He also wrote different cookbooks and 100% vegetable pastry<\/b> in collaboration with the famous gastronomic photographer Becky Lawton.<\/p>\n
The desire to share all his knowledge has led Toni to travel through different countries teaching courses<\/b> and advising different companies and restaurants.
